Pumpkin Bars with Maple Cream Cheese Frosting
- ⅔ cup vegetable oil
- ⅔ cup brown sugar
- 1/₃ cup granulated sugar
- 3 large eggs
- ⅔ cup pumpkin purée
- ¾ teaspoon baking soda
- ¾ teaspoon baking powder
- ⅜ teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1⅓ cups King Arthur Unbleached All-Purpose Flour
- ⅓ cup chopped walnuts, toasted
- ⅔ cup currants
- For the frosting:
- 4 ounces cream cheese
- 2 tablespoons softened butter
- 1 tablespoon maple syrup
- 1 ¼ cups powdered sugar
- pinch of salt
- ½ cup diced toasted walnuts
- Preheat the oven to 350°F.
- Grease and lightly flour a 9”x13" rimmed baking sheet.
- Mix oil and sugars together until well blended.
- Add eggs, then pumpkin purée in.
- Fold baking soda, baking powder, salt, and spice into the wet ingredients, and then stir in flour, beating gently to combine.
- Add in nuts and currants.
- Pour the batter into the prepared baking sheet.
- Bake for approximately 20 minutes, or until a cake tester inserted into the middle of the cake comes out clean.
- Cool the cake in the pan for 10 minutes.
- Meanwhile make the frosting: Beat cream cheese and butter together.
- Add in maple syrup, then mix in the powdered sugar and salt.
- Frost the bars and sprinkle with the toasted walnuts.
